Baklava
Ingredients
- Flour: 1 Kg.
- Eggs: 3 Pieces
- Salt: 10 gr.
- Water: Sufficiently
Ingredients : (Inner)
- Butter: 700 gr.
- Walnut, Peanut, Hazelnut : 700 gr.
Ingredients : (On to)
- Tere yağ: 700 gr.

Recipe
1.Mix the components and knead dough until get a homogenic structure.Then cover the dough with a wet cloth and rest it for 5-10 minutes.Seperate the kneaded dough into small lump of doughs and enlarge them in round shape with the help of a rolling pin.Inset farina between each lump and superpose them.Cover with a wet cloth and put them in rest for another 10 minutes again.After the rest,enlarge them widely and properly with a dough roller(use farina meanwhile).Set 10 sub-doughs and 12 upperside doughs( in widely enlarged form) on a tray(4 kilos total).Oil the sub-surface of the main tray and put 2 of the sub-doughs and cut their harrow.Divide each of the other 8 sub-doughs into 6 equal parts and spread them on the tray properly.
2. When this laying is over,put walnut,peanut and hazelnut in it. After this laying period now take 10 of upperside doughs and lay them on sub-doughs on the main tray(effusing parts of the doughs should be cut off).After cutting,set 10 doughs aside folded.Divide effused and cut doughs into 6 equal parts and lay them on the laid doughs.Inset the other 10 doughs well enough.
3. Make this laying one by one and oil the each dough.Lay the last teo doughs on the tray and oil the last surface.Fold all the doughs together after lay them properly.Then slice them with a knife.
Note: Do the slicing in two periods.After the first slice,oil doughs again.Then do two more slicings and oil them with mild oil.After two slicings,doughs become ready to be baked.Baking should be made at 180 C degrees and it lasts for 40-45 minutes.
The recipe of juice(sherbet):Compose and boild 2 kilos of sugar plus 1 litres of water and half lemon.When its stiffness thickens,turn down the heat and pour the juice on baklava without a moment’s delay.
Kalburabastı
Ingredients
- Flour : 1 Kg.
- Butter : 500 Gr.
- Powdered Sugar : 250 Gr.
- Baking Powder : 30 Gr.
- Farina : 200 Gr.
- Egg : 4 Pieces
Syrup:
- Granulated Sugar : 2 Kg.
- Water : 2 Liter
- Lemon : 1/2 Lemon

Recipe
After sieving the flour and shaping the middle of it like a circle put all the ingredients and knead it until a homogeneous dough is obtained. Take pieces in walnut size from this dough and roll them. Give shape to this pieces on a sieve with large holes by pressing with your finger. Arrange the desserts in a row in baking tin by leaving some distance between them so that they don’t stick to each other and bake them about 20 minutes in 160-170 centigrade. After taking them out of the oven, pour the sherbet which you prepared beforehand down on hot Kalburabastıs.
NOTE : Should one of the dessert or sherbet is cold pieces may not absorb sherbet.
Date-Shaped Sweet
Ingredients
- Flour : 250 Gr.
- Water : 400 Gr.
- Butter : 100 Gr.
- Lemon : 1/4 Lemon
- Egg : 4 Pieces
- Sugar : 750 Gr.
- Coconut : 50 Gr.
- Olive Oil : 3 Water Glasses

Recipe
1- Prepare cream dough with 100 gr. butter, 400 gr. water and 250 gr. flour.
2- Add 4 eggs into dough after taking it back from fire and knead thoroughly.
3- Split the dough in 1/2 walnut size pieces and make neat rounds.
4- Flatten each round slightly on sieve, grater or fork and give them Date shape by rolling.
5- Put them in boiling olive oil and broil until they turn slight pink.
6- Put the broiled ones in cold syrup and place the ones absorb it in serving dish.
7- Sprinkle clotted cream and coconut on and serve.
Apple Tart
Ingredients
- Flour : 1 Kg.
- Powdered Sugar : 250 Gr.
- Butter : 600 Gr.
Ingredients: Inner
- Grated Apple : 8 Pieces
- Cinnamon : 2 Spoons
- Walnut : 100 Gr.

Recipe
Knead ingredients on counter top, then roll out dough on counter top and stuff it in tart moulds with the help of rolling pin. Put inner ingredients a little. After giving the desired shape bake it in an oven of high centigrade and then serve.
Raisin Pie
Ingredients
- Flour : 1,6 Gr.
- Liquid Oil : 1 Kg.
- Granulated Sugar : 1 Kg.
- Egg : 27 Pieces
- Cornstarch : 100 Gr.
- Baking Powder : 60 Gr.
- Milk : 250 Gr.
- Vanilla : A Little
- Raisin : 200 Gr.

Recipe
Put all the ingredients in a mixing bowl and fluff them out by blending about 5 minutes with a mixer. Pour them in cake moulds and bake in an oven which is in 180 centigrade. Remove them out from moulds after they bakes and serve.
Wet Cake
Ingredients
- Flour : 250 Gr.
- Sugar : 250 Gr.
- Baking Powder : 15 Gr.
- Egg : 15 Pieces
- Water : 125 Gr.

Recipe
Blend all the ingredients with mixer until they fluff out. Then lubricate a roll pan and pour the blending into the pan. Bake it in an oven of high centigrade then leave it for cooling down. Pour white whipped cream on outer surface, sprinkle some coconut or peanut and serve.
Cookie
Ingredients
- Flour : 2 Water Glasses
- Margarine : 4 Table Spoons
- Granulated Sugar : A Little Deficient Than 1 Water Glass
- Egg : 2 Pieces
- Coconut : 1/2 Water Glass
- Marmelade
- Vanilla : A Little

Recipe
Blend butter and sugar until they fluff out. After adding eggs, flour and vanilla continue blending. Pour this blend into a pochette which you can squeeze or into a wax paper cone. Spread a wax paper into a baking tray. Squeeze cookies in round figures on wax paper. Sprinkle coconut on them abundantly. Bake them in an oven of 160 centigrade without too much frying. Apply marmelade on cookies you take out from the oven, stick them to each other and serve.
Pastry Rings Consumed in Holy Days
Ingredients
- Flour : 1 Kg.
- Butter : 600 Gr.
- Leaven : 50 Gr.
- Granulated Sugar : 50 Gr.
- Salt : 20 Gr.
- Mahaleb : 10 Gr.
- Egg : 3 Pieces
- Water : 2 Liter
- Molasses : 200 Gr.
- Cornstarch : 200 Gr.
- Black Cumin : 1 Pinch
- White Sesame : Sufficiently

Recipe
Blend water, cornstarch and molasses thoroughly in a deep bowl. Pour flour on counter top and shape the middle of it like a circle. Add sugar, salt, egg, butter and mahaleb. Knead the dough until it turns soft like an earlobe and set aside it for 5 minutes. Cut the dough in small pieces with a knife and roll them in circle shape 40 pieces on average. Apply egg yolk on at least twenty (20) of them and sprinkle black cumin. Bake them in an oven of 200-210 centigrade until they turn slight pink. Put other twenty (20) round pieces into a mixture of water, cornstarch and molasses which you prepared beforehand. Sprinkle sesame on abundantly. Arrange them in baking thin and bake in an oven of 200 centigrade.
Bread With Olives
Ingredients
- Flour : 3 Water Glasses
- Egg : 4 Pieces
- Olive Oil : 1 Water Glass
- Yoghurt : 1/2 Water Glass
- Olive : 1 Water Glass (Seedless and Minced)
- Mint : 1 Tea Spoon
- Salt : 1 Tea Spoon
- Baking Powder : 1 Tea Spoon
- Lemon : Half (The Water)

Recipe
Mix the eggs thoroughly with yoghurt, olive oil, lemon juice, salt and mint in a deep saucepan. Add flour, baking powder and olives into this blend and pour it into oily mould. Bake it about 30-40 minutes in an oven which is in middle centigrade. |
